“Cooking is an art; an expression. Cooking is my passion.

I grew up in Papua New Guinea, where food is always fresh, organic and available. It is an important part of my culture; something that brings everyone together.

I started cooking at an early age, cooking for my family and catering for events at church. It really clicked when I started learning how to cook different traditional dishes - including my signature Cassava Cake, which I’ll be baking for my Two Good Tuesday menu.

I hope to bring the taste of Papua New Guinea to the table, as well as an experience that is special and memorable.

I’ll be serving a traditional menu celebrating coconut, a main ingredient in our traditional cooking, with its earthy, creamy flavours adding a grounded touch to each dish:

Mumu, a way of preparing root vegetables like sweet potatoes, taro and plantain, with chicken and leafy greens, covered in banana leaves baked in the oven (traditionally cooked in an earth oven) (GF, Dairy Free, Vegan Option)

Bariva, a traditional dish cooked for special occasions, made up of steamed or boiled sago and ripe banana, topped with coconut cream (GF, Dairy Free, Vegan)

September’s edition celebrates Matalau, The Fold’s Barista All-Rounder and Work Work program Alumni, with a menu inspired by her roots in Papua New Guinea, where she first fell in love with cooking for family and community.

The best part? Every ticket directly funds Two Good Co’s work empowering and employing women who have experienced homelessness, domestic violence or complex trauma, helping create pathways through employment, training and community.

The Landing at VicX Tower, located above Victoria Cross Metro Station in North Sydney, is a purpose-led community hub and event space designed to foster connection and social impact.
